Ooey Gooey Chippy Bars

Ingredients

  • 3 tbsp honey
  • 1 1/4 c whole fat coconut milk
  • 1 1/2 cups graham cracker crumbs
  • 1/2 stick unsalted butter, melted
  • 2/3 cup sweetened shredded coconut
  • 2/3 cup milk chocolate chips
  • 1/3 cup chopped pecans

Preheat oven to 350°F. Combine graham cracker crumbs with the melted butter and spread buttered crumbs into an 8"x8" inch baking pan lined with parchment (if you don't have parchment, line with aluminum foil and carefully spray with cooking spray). Press crumbs down firmly until they feel almost solid. Pour in nuts, chocolate chips, and coconut in layers. Pour coconut milk into saucepan and heat over a low flame until warm and any solid waxy pieces have melted. Stir in honey and pour the mixture over the layers in the pan. If you have any extra chocolate chips, you can sprinkle them on top of the milk. Carefully place pan on bottom shelf in oven and bake for 30 to 35 minutes. Remove from oven and let cool at least an hour.
